Here are a few things you should definitely know about olive oil as you look toward beginning to take your health more seriously:

• Olive oil can be a life saver. This isn’t even an exaggeration—numerous studies have proven olive oil consumption to be a factor in preventing diabetes, cancer, heart disease, and conditions like Alzheimer’s and osteoporosis.
• There really is a difference between “extra virgin” and “refined.” Extra virgin oil is made by crushing olives, has a better nutritional profile, and generally has a better taste. Refined olive oils might be labeled as “pure,” “light” or simply “olive oil,” which means they are put through industrial processes with chemicals and heat. These are not as healthy.
• Bitter oil is a good thing! Olives that are picked fresh from the tree are bitter because of all the fresh nutrients found in them. They might not be as pleasant to eat, but they sure are healthy! The harvest date, or “best by” date, will give you a good indicator of how fresh the oil is. You should also look for quality seals, such as award stickers from the International Olive Oil Competition.
• Olive oil doesn’t age well. Unlike wine, extra virgin olive oils don’t get better with age. Store it in a cool, dark place before it’s opened for up to a year or so, and once it’s opened you should use it within a month or two.
• Good olive oil enhances other flavors. The flavor of olive oil binds with other foods to elevate the taste of your meal. This is one of the reasons it makes a great salad dressing.
